 Taqueria Las Catrinas has shown remarkable resilience and innovation, emerging during the pandemic's height to cater to the unique needs of funeral services, before expanding to serve various events and venues. Their journey from a local funeral home to a flourishing food trailer is a testament to their dedication and adaptability. Moreover, the fact that both owners are LBGTQ+ and staunch supporters of human rights adds a commendable dimension to their story, highlighting their commitment to inclusivity and social justice.
